Omelette Mexican.

Ingredients:

Eggplant - 1 pc.
Tomato - 1 pc.
Onions - 1 pc.
Bitter pepper - 1/4 pcs.
Red bell pepper - 1 pc.
Garlic - 2 cloves
Eggs - 4 pcs.
Butter - 50 g
Vegetable oil - 2 tbsp
Salt and pepper to taste
Dill, parsley, basil, oregano - to taste






















Preparation:

1. Eggplant, sweet pepper and onion cut into thin strips.
2. Sauté vegetables until cooked in vegetable oil.
3. Add the chopped tomatoes and hot peppers, salt to taste, cook another 2 minutes.
4. Beat eggs in foam and salt.
5. Slivoch. oil 1 h. l. Melt in a pan, drain the rest softened. Pour the oil into the egg mass. Fry the omelette at the low heat.
