Mousse of green peas.

Ingredients:

1. Leaf gelatine - 3 pieces.
2. Green peas - 200g
3. Sugar - to taste
4. Salt - to taste
5. Ground pepper - to taste
6. Cream - 80 ml
















Preparation:

1. Soak the leaf gelatine in cold boiled water for 5 minutes.
2. Pour water into a saucepan, bring to a boil and add the peas. Boil for a few minutes. Drain.
3. Use a blender to grind peas puree.
4. Squeeze the gelatin and add to the warm mashed peas. Once again whip.
5. rub through a sieve and season to taste with sugar, salt and pepper. Cool for 30 minutes.
6. Cool Whip the cream to soft peaks, add peas and stir. Refrigerate for 2 hours.
