Carrot soup with ginger and oranges.
Ingredients:
1 Peeled and sliced carrots - 2 pcs.
2. Olive oil - 2 tbsp
3. Onion, peeled and sliced - 1 pc.
4. Garlic, peeled and chopped - 1 clove
5. Grated ginger - 1 tsp
6. Juice and zest of 1 orange
7. Vegetable broth - 500 ml
8. Salt and pepper - to taste
Preparation:
1. In a saucepan, heat the olive oil and fry the onion until soft. Add garlic, ginger and orange zest. Cook for a minute, then add the carrots and pour the broth.
2. Simmer until carrots are tender. With immersion blender to whip the soup until smooth. Add orange juice and season with salt and pepper. Once again whip.
3. Ready to warm the soup and serve immediately.
