Fried chicken wings in a citrus glaze.

Ingredients:


For the marinade and wings:
1. buttermilk or yogurt - 2 cups
2. Soy sauce - 2 tablespoons
3. paprika - 1 tablespoon
4. Chicken wings - 24 pcs.
5. Rice or wheat flour - 1/2 cup
6. Vegetable oil - for frying

For the glaze:

1. Soy sauce - 1/4 cup
2. Brown sugar - 1/4 cup
3. Juice of 3 oranges
4. Juice of 3 limes
5. Juice of 3 lemons
6. chili flakes - 1 tablespoon
7. Celery - for garnish
8. Mint - for garnish
















Preparation:

1. Wings, divided into segments, marinate in a mixture of yogurt, soy sauce and paprika. Leave for 2 hours or overnight.
2. Send the soy sauce and brown sugar in a pan. Cook until a sticky glaze. Give it simmer on low heat for 2 minutes.
3. Add the citrus juice and chili pepper. Stir whisk and bring to a boil. Simmer for about 10 minutes.
4. Remove wings from marinade and roll in rice or wheat flour. Fry wings batches until cooked in a separate pan.
5. Add the wings to the pan with the glaze, stir. Serve with celery and mint.
