Сoconut cupcakes.
Ingredients:
1. Egg whites - 4 pcs.
2. Sugar - 100 g
3. Ground almonds - 1 tbsp
4. Lemon juice - 1/2 tsp
5. Flour - 50 g
Glaze:
1. Powdered sugar - 100 g
2. Coconut milk - 4 tablespoons
3. Coconut for decoration
Preparation:
1. Beat the egg whites until foamy. Add lemon juice and sugar and beat until light and density.
2. Add the sifted flour and ground almonds. Gently stir spatula movements from the bottom up.
3. Cover the cupcake tins with paper liners and fill them with batter.
4. Bake in a preheated 180 degree oven for 15-20 minutes. Cool on a wire rack.
5. Prepare the glaze. Stir in coconut milk with sugar and pour over cupcakes. Sprinkle with coconut and serve.
