Salad of roasted eggplant with tomatoes.
Ingredients:
1. Eggplant - 1 pc.
2. Red cherry tomatoes - 8 -10 pcs.
3. Yellow cherry tomatoes - 8 -10 pcs.
4 Vegetable oil - for frying
5. Salt and pepper - to taste
6. Green basil - for decoration
For the filling:
1. Garlic - 3 cloves
2. basil - a few leaves
3. Spicy chili sauce - to taste
4. Salt and pepper - to taste
Preparation:
1. Wash eggplant and cut into thin slices. Salt and leave a minimum of half an hour. Rinse and dry.
2. Sauté until cooked on a heated pan with vegetable oil. Season with salt and pepper. Put the eggplant slices on a paper towel to absorb excess fat.
3. Cherry Tomatoes Wash and chop.
4. To fill the finely chopped garlic, basil, mix, pour the oil, salt and pepper, pour the spicy chili sauce (to taste).
5. Put all the ingredients of the salad on a serving dish. Drizzle with dressing and garnish with a sprig of basil.
